Our story
Chosen for the fire
Carbon cooks over charcoal and flame, so we chose wines that stand up to smoke, spice and char. The list travels from the Mosel to Margaux, from Friuli to the Dão, from Burgundy to the hills above Adelaide, and each bottle is here because it belongs beside our food.
